Ingredients:
- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/2 cup enchilada sauce keto-friendly
- 1/4 cup diced green chilies
- 1/4 cup diced onions
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/4 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish optional
Instructions:
Preheat your oven to 350F 175C
In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, enchilada sauce, diced green chilies, diced onions, diced red bell pepper, diced green bell pepper, sour cream, chili powder, cumin, garlic powder, salt, and pepper
Mix until all ingredients are well combined
Transfer the mixture into a greased casserole dish and spread it out evenly
