In the form of a tasty ice cream sandwich, you can enjoy cranachan, a traditional Scottish dessert. Creamy ice cream with honey, raspberries, toasted oats, and whisky mixed in, sat between two buttery shortbread cookies.
Ingredients:
- 2 cups heavy cream
- 1 cup sweetened condensed milk
- 1/4 cup Scotch whisky
- 1/2 cup honey
- 1/2 cup toasted oats
- 1/4 cup raspberries, crushed
- 12 shortbread cookies
Instructions:
In a large bowl, whip the heavy cream until stiff peaks form
Gently fold in the sweetened condensed milk and Scotch whisky until well combined
Drizzle in the honey and fold until fully incorporated
Fold in the toasted oats and crushed raspberries
Pour the mixture into a shallow dish and freeze for 4 hours or until firm
Once firm, scoop the ice cream onto half of the shortbread cookies and sandwich with the remaining cookies
Serve immediately or return to the freezer until ready to serve
