Ingredients:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup semi-sweet chocolate chips
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract
Mix until smooth
Add baking soda and a pinch of salt to the mixture
Stir to incorporate
Gently fold in the mini marshmallows and semi-sweet chocolate chips
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart
Flatten each dough ball slightly with a fork, creating a crisscross pattern
Bake in the preheated oven for about 10-12 minutes or until the edges are golden
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
