A creamy and nutritious soup that combines the subtle flavors of cauliflower and the peppery kick of watercress, perfect for those following a keto or low-carb diet.
Ingredients:
- 1 medium cauliflower, chopped
- 2 bunches watercress, stems removed
- 4 cups chicken or vegetable broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: heavy cream or coconut cream for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, saut until softened, about 3-4 minutes
Add cauliflower florets and watercress, saut for another 2 minutes
Pour in chicken or vegetable broth, bring to a simmer, and cook until cauliflower is tender, about 15-20 minutes
Using an immersion blender or regular blender, puree the soup until smooth
Season with salt and pepper to taste
Serve hot, optionally garnished with a drizzle of heavy cream or coconut cream
