Ingredients:
- 1 block tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 2 tablespoons tahini
- 2 tablespoons water
- 1 tablespoon maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon ginger, grated
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions:
In a bowl, toss cubed tofu with soy sauce, sesame oil, and cornstarch until coated
Heat olive oil in a large skillet over medium heat
Add tofu and cook until golden brown, about 5 minutes
Remove tofu from skillet and set aside
In the same skillet, add onion and garlic
Saut until fragrant
Add bell peppers and broccoli to the skillet
Cook until vegetables are tender-crisp
Meanwhile, in a small bowl, whisk together tahini, water, maple syrup, rice vinegar, ginger, salt, and pepper to make the sauce
Return tofu to the skillet and pour the tahini sauce over the tofu and vegetables
Stir until everything is coated in the sauce
Serve the tofu stir fry over cooked rice
