Ingredients:

  • 1 lb boneless, skinless chicken thighs, diced
  • 2 cups butternut squash, diced
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions:

Chop up some chicken and put it in the slow cooker with some butternut squash, carrots, onion, and garlic

Add the chicken broth and coconut milk and mix them together

Spice it up with nutmeg, salt, pepper, and dried thyme and rosemary

Use a stir to mix

Turn the heat to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the vegetables are soft

In the last 30 minutes of cooking, add the chopped kale and mix it in

Check the seasoning and make changes if needed

Bake in the preheated oven for 40-45 minutes, or until the wings are golden brown and cooked through, flipping halfway through cooking

Once done, sprinkle with sesame seeds and chopped green onions for garnish
